Codfish “à Brás” Ingredients 400g salt cod 500g batata-palha 6 large eggs 2 large onions 3 to 4 garlic cloves 100ml extra virgin olive oil Black olives Fresh parsley, finely chopped Salt and black pepper to taste Recipe If your salt cod is already desalted but raw, bring a pot of water to a boil, drop the cod in, and cook for about 5 to 7 minutes. Remove the cod, let it cool, and then shred it finely with your fingers (or wrap it in a clean kitchen towel and rub it vigorously to shred it). Make sure to remove any remaining skin or bones. In a bowl, whisk the 6 eggs with a pinch of salt and black pepper. Set aside. Heat the olive oil in a large, deep skillet or wok over medium-low heat. Add the sliced onions, garlic, and a bay leaf (optional). Cook slowly for about 10 minutes until the onions are soft, translucent, and slightly golden, but not browned.
