It’s Summer and time to break out your grill and
do some grilling.
Summer not only heralds the
beginning of the outdoor cooking season, it is
also the traditional season of lamb.
So why not
try something different like some succulent
lamb chops.
Lamb chops are the most tender and leanest of
the variety of lamb available.
That can make
them the most expensive too, but worth the extra
outlay of hard earned cash.
They can be easily
identified by the T-bone.

lamb chops
Remove excess fat:
To help avoid unwanted grilling flareups, its
best to remove any excess fat from the edges
and back of the meat rack.
Grilling your lamb
with the excess fat won’t always enhance the
taste and you avoid flare-ups which can make
the grilling a bit awkward.
But you can leave it
on if you wish.
Use a small sharp knife and trim
away the fat leaving about a 1/8-inch-thick
layer.
