Il-Biskuttini tar-Raħal, Village Biscuits in English, are traditionally served
during special occasions such as theChristening of a baby. They would be
decorated on top with swirls of pink icing for a baby girl or pale blue for a boy.
Or else they arejust greatas a dessert with a cup of teaor coffee.
Ingredients:
• 400 g plain flour
• 200 g sugar
• 125 g margerine
• 3 eggs
• ½ a teaspoon amonium bicarbonate
• 1 spoon lemon zest
• 1 spoon orange zest
• Icing sugar
• Red food colouring
• 1 tablespoon mixed spices
Method:
1. Preheat the oven at200 °C.
2. Mix the sugar and the margerine and add one egg and then the other
gradually while mixing.
3. Add the flour, lemon zest,mixed spices and amonium bicarbonate and work
it until it is a soft dough.
4. Cut the dough in two.
